A New Spin On the Classic Hamburger

With Memorial Day right around the corner, we couldn't resist sharing with you how to create this new and improved "Hamburger"


Buns - Vanilla cupcakes cut horizontally in half
Burger - Brownies cut into circles with a cookie cutter
Lettuce - Coconut mixed with green food coloring
Ketchup & Mustard - Vanilla frosting mixed with yellow and red food coloring

To Assemble: 
  • Take the top half of the cupcake and brush it with honey and sprinkle on some sesame seeds; set aside. 
  • Place the brownie on top of the bottom half of the cupcake (you can use vanilla frosting to act as the "glue" AKA "mayo")
  • Spread a little vanilla icing on top of the brownie and sprinkle on the coconut. 
  • With a piping bag, add the "Ketchup and Mustard"
  • Put the top half on top

Voila! Simple, Fun, and Delicious.

Mother's Day Waffle Bar Breakfast

This year for Mother's Day, do something different for Mom. 

Instead of having the same old brunch, serve a Waffle Bar. You can offer a variety of mouth-watering options such as: regular, chocolate chip, cinnamon, whole wheat, pumpkin, and apple streusel waffles. Then top them off with fruit, whipped cream, different flavored syrup, peanut butter, nutella, etc.

Oh and don't forget the sides: bacon, eggs, sausage, or hash browns are delicious additions to this waffle affair.

Birthday Scrabble Cookies

This upcoming weekend is the BF's Birthday...needless to say the search was on to find a fun delicious dessert to make, so when I came across these Scrabble Cookies I was SOLD! These are sure to appeal to his love of language -- he is an English teacher after-all. These should satisfy his competitiveness as well as his sweet tooth (especially since they are lemon cookies, his favorite). 

Let's just hope that I can make them as authentic as possible, so they can be used on the actual Scrabble board.


Meyer Lemon Sugar Cookies

1/2 pound (2 sticks) butter, softened
3/4 cup superfine sugar
1 egg yolk, lightly beaten
2 tsp fresh Meyer Lemon juice
2 1/2 cups all-purpose flour
finely grated rind of 1 Meyer Lemon
salt

Put the butter and sugar and mix well with a rubber spatula or wooden spoon. Then add the egg yolk and juice and beat in. Sift the flour and salt into the bowl and stir until combined. Add the lemon rind and combine once more.

Divide the dough into 2 disks and wrap in plastic wrap. Place in refrigerator to chill until firm, about 30 min to an hour.

Preheat oven to 375F degrees. Line baking trays with parchment paper. Unwrap the dough, roll to 1/8 inch thick and use a chef's knife to make straight cuts. (A pasty wheel dragged my dough to skewed it, find out what works best for you. If the dough becomes too warm or soft to be transferred to the baking tray, return dough in the refrigerator to chill, 5-10 minutes.

Bake for 6-7 minutes, or until edges turn light brown. Transfer to wire racks to cool.

To frost the cookies, I used royal icing thinned with a little water. Letters were written using edible markers.
